Halibut with Mushrooms

Shiitake mushrooms take a top-billing in this amazing recipe by Woodstock Foods. Well known for their rich and smoky flavor, these nutritious edibles will add a whole new level of sophistication to this wonderful fish plate. Perfect for halibut or any other meaty white fish, this entrée’s taste can’t be beat.


  • 1½ lbs halibut (or other meaty, white-fleshed fish, such as cod), cut into 2- or 3-inch pieces
  • 2 Tablespoons olive oil
  • 1 cup onions, sliced
  • 2 garlic cloves, sliced
  • 1½ cups tomatoes, chopped
  • 10 oz (1 pkg) Woodstock Organic Shiitake Mushrooms
  • Salt and freshly ground black pepper
  • 2 Tablespoons flat-leafed parsley, minced


  1. Wash and cut the fish into 2- or 3-inch chunks
  2. Heat the oil in a large skillet over a medium heat
  3. Add the onions and garlic, and cook until the onions are soft, about 5 minutes
  4. Turn the heat down to medium-low
  5. Add the tomatoes and cook until they break down, about 5 minutes
  6. Add the mushrooms and salt to taste; cook for 5 minutes, until the flavors meld
  7. Tuck the fish pieces into the sauce.
  8. Do not overlap the fish pieces.
  9. Grind black pepper onto the fish pieces, cover, and cook until the fish separates easily when prodded with a fork, about 7 minutes
