Santa Fe Pasta Salad

Great non-traditional way to spice up your pasta salad. This recipe is a great new take on an old favorite. The flavors work together almost like a Mexican Salsa, but the addition of the pasta makes something totally new. Try it out at your next get together, your guests won’t be disappointed.


  • 1 1/2 cups uncooked small pasta shells
  • 1 jar (16 oz.) medium salsa
  • 1 can (15 oz.) black beans, rinsed and drained
  • 2/3 cup chopped red bell pepper
  • 2/3 cup frozen organic sweet corn, thawed
  • 1/3 cup sliced ripe olives
  • 3 Tbsp. chopped fresh cilantro


  1. Cook pasta according to package directions; drain.
  2. Toss hot pasta with salsa.
  3. Stir in beans, bell pepper, corn, olives and cilantro.
  4. Cover and refrigerate 4 hours or overnight before serving.
