Nothing says a relaxing Sunday morning like waking up to the smell of freshly baked goods, fresh from the oven. This weekend, give your family a treat by making these delicious fresh muffins made with Tiptree Apricot Preserves and using If You Care Unbleached Large Baking Cups.


  • 1 large egg, lightly beaten
  • 1 cup milk
  • 4 Tbsp vegetable oil
  • 1 cup bran
  • Tiptree Apricot Preserve
  • 1 Tbsp baking powder
  • 3 Tbsp granulated sugar
  • Grated zest of 1 orange
  • 1 cup unbleached, all-purpose flour


  1. Preheat oven to 400°F. Line muffin tin with If You Care Unbleached Large Baking Cups. Alternatively, you can also use the baking cups on a flat baking sheet.
  2. Combine beaten egg, milk, oil, and bran in a medium bowl. Let stand 15 minutes.
  3. In a separate bowl, mix flour, baking powder, sugar and orange zest.
  4. Add this to bran mixture.
  5. Combine gently only until dry ingredients are moistened.
  6. Fill baking cups halfway with mixture.
  7. Add a teaspoon of Tiptree Apricot Preserve to each one.
  8. Cover with remaining mixture. Bake 20-30 minutes, or until toothpick inserted into center comes out clean.
