Blackberry Lime Chicken Wings

Ingredients:
- 2 lbs. free-range chicken wings
- 1 10-oz. jar blackberry jam
- 3 Tbsp. fresh lime juice
- 2 Tbsp. olive oil
- 1 tsp. Jane’s Krazy Mixed-Up Sweet Lime Pepper
- 8 oz. organic feta cheese
Directions:
- In a blender, combine jam, lime juice, olive oil and lime pepper.
- Whirl until smooth.
- Pour mixture into a 1 gallon re-sealable bag.
- Add chicken wings.
- Seal and shake to coat evenly.
- Refrigerate overnight or up to 24 hours, turning occasionally to coat.
- Preheat oven to 400º F.
- Line a large sheet pan with heavy-duty aluminum foil.
- Place wings in a single layer on foil.
- Bake for 45 minutes.
- Remove from oven and sprinkle with feta cheese.
- Let stand 5 minutes and then serve.
Servings: 8 (appetizer) or 4 (entree)
