Fava Bean Crostini
Ingredients:
- 3 lbs. fava beans, shelled
- 3 cloves garlic, smashed (divided)
- 1 tsp. lemon juice
- 3 Tbsp. Spectrum® Organic Extra Virgin Olive Oil
- 1 baguette, cut crosswise into 1/2-inch slices
- 1/4 cup parmigiano-reggiano, shaved
Directions:
- Heat grill to medium. Fill a mixing bowl with ice water.
- Bring a pot of salted water to a boil and drop shelled fava beans in for 20 seconds.
- Drain, transfer to ice water to cool quickly, and drain again.
- Slip each bean out of its skin and into a bowl.
- Transfer fava beans, two cloves of garlic and lemon juice to a food processor or blender and blend until smooth.
- Drizzle in Spectrum® Organic Extra Virgin Olive Oil and blend until emulsified.
- Grill or broil the baguette slices until crisp and rub both sides with remaining clove of garlic.
- Spread fava bean puree on each of the baguette slices, top with a pinch of shaved pamigiano-reggiano and serve.
