Mole Sauce
Ingredients:
- 3 Tbsp. olive oil
- 1 cup red onion, finely chopped
- 4-6 cloves minced garlic
- 1/2 a bunch fresh oregano
- 1 tsp. cumin, ground
- 1/4 tsp. cinnamon, ground
- 3 Tbsp. chili powder
- 3 Tbsp. all-purpose flour, optional
- 4 cups of broth (chicken, beef, or vegetable)
- 2 oz. Equal Exchange® cooking cocoa with a pinch of sugar
- Cayenne to taste
- Whole bunch cilantro – finely chopped
Directions:
- Heat oil in a large saucepan over a medium low heat.
- Add onion, garlic, oregano, cumin and cinnamon.
- Cover and cook until onions are almost tender, stirring occasionally, about 10 minutes.
- Mix in chili powder and flour, stir for 3 minutes.
- Gradually whisk in broth.
- Increase heat to medium high. Boil until reduced, about 35 minutes, stirring occasionally.
- Remove from heat.
- Whisk in chocolate; season with salt and pepper, and cayenne (if desired).
- Add cilantro as a final note.
