Mori-Nu Eggless Salad
Ingredients:
- 1/4 tsp. honey
- 1/8 tsp. salt
- 1/4 tsp. turmeric
- 1/8 tsp. dry mustard
- 2 Tbsp. sweet pickle relish
- 1 tsp. minced capers
- 2 Tbsp. minced celery
- 3 Tbsp. light soy mayonnaise
- 1/2 tsp. minced fresh dill weed
- 1/8 tsp. freshly ground black pepper
- 1 pkg. Mori-Nu® Silken Lite Tofu (Extra-Firm or Firm)
- 2 Tbsp. minced scallions (green and white parts)
Directions:
- Drain tofu and pat dry with paper towels.
- Grate tofu as you would cheese into a bowl.
- In another bowl, mix mayonnaise, honey, salt and turmeric.
- Add tofu. Mix in remaining ingredients.
- Refrigerate for 30 minutes. Serve on sandwiches or as a dip for chips.
