Thai Ginger Meatballs with Peanut Dipping Sauce
Ingredients:
1 1/2 pounds ground free range turkey breast
1 1/2 tsp. freshly grated ginger
3/4 cup San-J Reduced Sodium Tamari Soy Sauce, divided
1 cup panko bread crumbs
1 large egg
1 cup San-J Thai Peanut Sauce
Garnish: Cilantro sprigs
Directions:
Preheat oven to 375º F.
In a large bowl, combine ground turkey breast, ginger, 1/2 cup soy sauce, panko, and egg.
Shape mixture into walnut size balls and place on baking sheet that has been prepared with no-stick cooking spray.
Bake 30-35 minutes or until thermometer inserted into center of meatball registers 170° F.
Remove from oven and prepare sauce.
In a small saucepan, combine Thai peanut sauce and remaining soy sauce.
Cook, over medium high, whisking frequently, until mixture is smooth and heated.
Arrange meatballs on serving platter and drizzle about 1/4 cup sauce over meatballs.
Garnish with cilantro sprigs and serve remaining sauce on side.
