Chocolate Chunk Flap Jacks
Ingredients:
- 1 cup flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 Tbsp. sugar
- 1 egg
- 1 1/2 cups buttermilk
- 1/2 tsp. vanilla
- 2 Tbsp. butter
- 1 bar Equal Exchange Organic Milk Chocolate with a Hint of Hazelnut
- Equal Exchange Organic Fair Trade Bananas
- Maple syrup, to taste
Directions:
- In a small bowl, beat an egg and stir in buttermilk.
- In a second larger bowl, combine flour, sugar, baking powder, baking soda and salt.
- Create a well in the center of the dry ingredients and pour in buttermilk mixture. Stir just until combined and add vanilla. Batter will be lumpy.
- Melt butter in a skillet and add to batter.
- Chop chocolate bar into fine chunks, a variation of sizes keeps it exciting!
- Wipe excess butter from skillet and bring heat to a medium-low. Pour batter into pan by 1/4 cupfuls. Allow bubbles to form on top. This will take 2-3 minutes.
- When bubbles have formed, flip! Cook each flapjack a total of 4-6 minutes.
- Top with butter and syrup and sliced bananas and enjoy!
