Gingerbread Waffles

Ingredients:
- 6 cups all-purpose flour
- 3 cup whole-wheat flour
- 1 1/2 cup non-fat dry milk
- 1/2 cup sugar
- 1/4 cup baking powder
- 1 tsp. lecithin (either liquid or powdered)*
- 2 Tbsp. cinnamon
- 4 Tbsp. powdered ginger
- 1 Tbsp. salt
- 1/2 cup milk
- 1 egg
- 1 tsp. vanilla extract
- 2 Tbsp. molasses
- 2 Tbsp. maple syrup
- 2 Tbsp. vegetable oil
- 1 1/2 Tbsp. Ginger People Crystallized Ginger
*If liquid is used, only 1/4 tsp. is added.
Directions:
- Mix the dry ingredients together and store in an air-tight container.
- Combine the wet ingredients together and whisk until blended.
- Stir in 1 1/4 cup of dry mix until combined.
- The mix should be thick but still easy to pour. If it is very wet, add a little more of the dry mix.
- Cook in a waffle maker following the manufacturer’s directions.
- Serve with some butter and real maple syrup.
