Pancake Enlightenment

Ingredients:
- 2 eggs
- 1 cup Silk® Soymilk (Vanilla or Plain)
- 1 cup flour
- 1 Tbsp. cornstarch
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt (to desired taste)
- 2 Tbsp. honey
- 1/4 cup Silk Live® Soy Yogurt (Vanilla or Plain)
- 2 Tbsp. canola oil
- 3/4 cup blueberries
Directions:
- Beat eggs and Silk® Soymilk in a mixing bowl.
- Add flour, cornstarch, baking powder, baking soda, salt, honey, and Silk® Soy Yogurt. Beat well.
- Gently stir in blueberries and oil. Cook on a hot griddle.
Servings: 4
Note: You can substitute 3/4 cup sliced bananas, strawberries, raspberries, etc.
