Flourless Almond Butter, Chocolate & Ginger Chunk Cookies
Recipe submitted by Suzanne R. of Ramona, CA for the Mambolicious Recipe Contest 2009.
Ingredients:
- 2 Cups Smooth Raw or Roasted Almond Butter
- 2/3 Cup Sugar
- 2 tsp. Baking Soda
- 2 Extra Large Eggs – lightly beaten
- ½ cup Equal Exchange Organic Very Dark Chocolate – Chopped into chunks (add more if you like it real chocolately!)
- 1/4 cup The Ginger People Baker’s Cut Crystallized Ginger
Directions:
- Preheat the oven to 350◦ F.
- In a medium bowl, mix the almond butter with the sugar, baking soda and egg.
- Stir in the chopped chocolate and ginger.
- With your hands, (this gets gooey), roll the batter into individual balls – about 2 ” wide.
- Set the balls onto ungreased baking sheets.
- Bake for 15 minutes.
