Submitted by Karla A. of Otega, NY, for the Mambolicious Recipe Contest 2009
Ingredients:
- 3 10.5-oz. bars Equal Exchange Dark Chocolate with Almonds
- 1 cup Sugar in the Raw
- 1/2 cup natural unsweetened applesauce
- 2 tsp. unsalted butter
- 3 egg whites
- 1 1/4 cups all-purpose flour
- 1/4 cup Equal Exchange Baking Cocoa
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1 tsp. vanilla
Directions:
- Preheat oven to 350° F. Grease 9″ X 9″ baking pan. (You may use fat free cooking spray.)
- Chop candy bars into small pieces (about the size of a pea). Divide in half.
- Separate eggs. Stir whites together lightly with fork.
- In medium bowl combine flour, baking cocoa, salt, baking soda. Set aside.
- In saucepan, on low heat, melt butter, 1/2 of chopped chocolate bars, applesauce and sugar. Stir constantly. When melted remove from heat. Cool slightly. Stirring a little will help remove some heat.
- Gently whisk in egg whites and vanilla.
- Mix together with dry mixture. Add second half chopped chocolate bars.
- Pour into 9X9 baking pan.
- Bake brownies at 350° F for 23 to 25 minutes or until the top begins to crack. Toothpick test for doneness will not work with these.
- Remove from oven. Cool. Cut into 12 equal pieces.
