Key Lime Tofu Pie
Ingredients:
- 1 package Mori-Nu® Silken Firm Tofu
- 8 oz. tofu cream cheese
- 1/2 cup key lime or regular lime juice
- 2 tsp. lime rind, grated
- 2 packages Mori-Nu® Mates Lemon Creme or Vanilla Pudding Mix
- 1 graham cracker pie shell
Directions:
- Drain excess water from tofu.
- Blend tofu with lime juice in a food processor until completely creamy and smooth.
- Add the rest of the ingredients; re-blend until smooth.
- Pour into pie shell and chill for 2-3 hours.
