Refreshing Caribbean Fruit Salad with Coconut Ginger Lime Dressing

Ingredients:
- 2 cups Brown Cow Low Fat Vanilla Bean Yogurt
- 1 tsp. coconut extract
- 2 Tbsp. honey
- 1 1/2 tsp. freshly grated lime zest
- 1/4 cup The Ginger People crystallized ginger, crushed
- 1 large ruby red grapefruit, peeled & sectioned, membrane removed
- 1 medium to large ripe papaya, peeled & sliced, seeds reserved
- 2 cups seedless watermelon chunks
- 2 large ripe mangos, peeled & sliced
- 2 cups fresh pineapple chunks
- 2 large star fruit, thinly sliced
- 1 cup fresh cherries, halved & pitted
- 1 cup toasted coconut
Directions:
- Spoon yogurt into a paper towel lined colander and drain for 20 minutes.
- Meanwhile, layer fruit in a large glass bowl in the following order: grapefruit sections, papaya, watermelon, mango, pineapple, star fruit and cherries.
- Sprinkle the toasted coconut over the top and garnish with the reserved papaya seeds.
- In a medium bowl, whisk together the drained yogurt, coconut extract, honey, lime zest and crushed ginger.
- Spoon dressing into serving dish and serve with salad.
