Asian Coconut Salmon
Ingredients:
1/2 cup coconut milk
1 Tbsp. San-J® Tamari
1 Tbsp. fresh grated ginger
2 cloves garlic, minced
1 Tbsp. fresh lemongrass
1 tsp. lemon juice
1 Tbsp. honey
1 Tbsp. coconut oil
2 small, thin, salmon fillets
1 cup cooked basmati rice
Directions:
Heat over medium heat coconut oil.
Add ginger and cook for one minute, then add garlic and cook for another minute.
Just brown salmon fillets on each side, pour coconut milk over, add San-J® Tamari, lemon juice, lemon grass, and honey.
Turn down heat and simmer about 20 minutes until cooked through.
