Bolognese – Meatless Meat Sauce

Ingredients:
- 4 Tbsp. olive oil
- 2 Tbsp. butter
- 1 med. onion, finely chopped
- 1 stalk celery, finely sliced
- 2 carrots, finely sliced
- 1 clove garlic, finely chopped
- 12 oz. Smart Ground original meatless ground beef
- 2/3 cup red wine or sweet vermouth
- 1/2 cup milk
- 1 x 14 oz. can of plum tomatoes, chopped, with their juice
- 1 bay leaf
- 3 shakes dried thyme
- Jane’s Krazy Mixed Up Salt & Pepper
Directions:
- Heat the butter and the olive oil in a heavy earthenware pot.
- Add the onions, garlic, celery, carrots and saute over medium heat for about 5 minutes, stirring a few times. Onions should be translucent when finished.
- Add Smart Ground original meatless ground beef and crumble it into the vegetables with a fork. Season with salt and pepper and stir for about 3 minutes.
- Pour in red wine and stir until it evaporates; about 3-4 minutes.
- Repeat this step with the milk.
- Add the tomatoes, bay leaf, and thyme.
- Bring to a boil and stir. Reduce heat and simmer uncovered for about 30 minutes.
- Spoon over your favorite pasta and serve.
