Bolognese – Meatless Meat Sauce

Ingredients:

  • 4 Tbsp. olive oil
  • 2 Tbsp. butter
  • 1 med. onion, finely chopped
  • 1 stalk celery, finely sliced
  • 2 carrots, finely sliced
  • 1 clove garlic, finely chopped
  • 12 oz. Smart Ground original meatless ground beef
  • 2/3 cup red wine or sweet vermouth
  • 1/2 cup milk
  • 1 x 14 oz. can of plum tomatoes, chopped, with their juice
  • 1 bay leaf
  • 3 shakes dried thyme
  • Jane’s Krazy Mixed Up Salt & Pepper

Directions:

  1. Heat the butter and the olive oil in a heavy earthenware pot.
  2. Add the onions, garlic, celery, carrots and saute over medium heat for about 5 minutes, stirring a few times. Onions should be translucent when finished.
  3. Add Smart Ground original meatless ground beef and crumble it into the vegetables with a fork. Season with salt and pepper and stir for about 3 minutes.
  4. Pour in red wine and stir until it evaporates; about 3-4 minutes.
  5. Repeat this step with the milk.
  6. Add the tomatoes, bay leaf, and thyme.
  7. Bring to a boil and stir. Reduce heat and simmer uncovered for about 30 minutes.
  8. Spoon over your favorite pasta and serve.
