Submitted by Carrie M. of Roy, UT, for the Mambolicious Recipe Contest 2009.
Ingredients:
Fajitas:
- 3-4 large Ribeye steaks (3 lbs total) or chicken or meat substitute
- 1 onion, sliced in half rings
- 1 green bell pepper
- 1 red bell pepper
- 3 Tbsp. vegetable oil
- 1/4 cup water
- 10 tortillas
- Krazy Fajita Seasoning (recipe follows)
- Sour cream, to taste
- Chopped tomatoes, to taste
- Shredded cheese, to taste
Krazy Fajita Seasoning:
- 2 1/2 tsp. Jane’s Krazy Mixed Up Pepper
- 1/4 tsp. cayenne powder
- 1 tsp. garlic powder
- 2 1/2 tsp. chili powder
- 1 1/4 tsp cumin
- 1 1/2 tsp Jane’s Krazy Mixed-Up Salt
- 1 tsp. dried oregano
- 1 tsp. brown sugar
- Dash of cinnamon
Directions:
- Heat a grill or grill pan to medium high heat.
- Season the steaks, chicken or meat substitute with a mixture of 2 tsp. Jane’s Krazy Mixed Up Salt and 1 tsp. Jane’s Krazy Mixed Up Pepper.
- When the grill is hot and ready, grill the steaks for about 5 minutes on each side. Let the steaks sit for about 5-10 minutes.
- During that time, prep your vegetables by slicing the onion into thin rings, then cut them in half.
- Then thinly slice the green and red bell peppers, taking the seeds and veins out.
- Heat a large saute pan with 3 Tbsp. oil. Add the onions and the peppers to the pan and saute for about 3-5 min or until onions are translucent.
- Thinly slice the steaks, chicken or meat substitute, and add to the peppers and onion.
- Add the Krazy Fajita Seasoning. Saute another couple of minutes, adding the 1/4 cup water. (It creates a nice juice!)
- Grab a tortilla, fill it with the steak mixture, add some shredded cheese, chopped tomatoes, and sour cream…and most of all, Enjoy!!
