Delectable Fusion Tenderloin
Ingredients:
For the Marinade:
1 cup Wheat Free San-J Tamari
1 cup apricot preserves
3 Tbsp. sesame oil
1 tsp. fresh grated ginger
1 Tbsp. fresh pressed garlic
1 tsp. lemon zest
The Tenderloin:
1 pound of uncooked pork tenderloin. Each slice should be approximately 1 inch thick.
Steamed Rice and Green Vegetables of your choice
Directions:
In a medium-size bowl, whisk in each ingredient in the order listed. Don’t use a food processor, as the texture will be lost.
Pierce holes in each pork slice, and place each one in the marinade. Ensure that each slice is completely coated with the marinade for even saturation.
Cover bowl and leave in the refrigerator for at least one hour and as long as overnight.
When ready, you may either grill on your indoor or outdoor barbeque, or place in a Fusion Grill for 45 minutes.
Place the remaining marinade in a microwave bowl and cook on high for at least 1 minute. This can be poured over the cooked tenderloin and steamed rice/vegetable melange.
