East Meets Southwest Fish Tacos

Ingredients:
- 4 lbs. Mahi Mahi ( 3 oz. per taco)
- 2 bottles SAN-J Thai Peanut Sauce
- 9 limes
- 3 Tbsp. minced garlic
- 40 fresh soft corn tortillas
- 2 cups bean sprouts
- Whole Foods’ Mango Salsa (or homemade)
- Queso Fresco ( Mexican white cheese–crumbled)
- Chipotle, to taste
- Adobo, to taste
- Mayonnaise, to taste
- Cilantro, to taste
- Fresh Jalapeño peppers, to taste
Directions:
- Marinate Mahi Mahi in SAN-J Thai Peanut Sauce with minced garlic and lime juice squeezed from 6 limes.
- Pan fry fish in sauce/marinade. Heat fresh soft corn tortillas. Mix chipotle and adobo into mayonnaise.
- Drain Asian bean sprouts. Wash/Chop Cilantro. Cut limes into wedges. Crumble Queso Fresco into a bowl. Dice Fresh Jalapeño.
- Make Tacos with 2 fresh Tortillas: Spread one dollop of spicy mayonnaise down the middle of the top corn tortilla.
- Add 3oz of Mahi Mahi in SAN-J Thai Peanut Sauce. Top with Mango Salsa, Bean sprouts, Cilantro, a squeeze of fresh lime, Queso Fresco crumbles and a few pieces of fresh jalapeño.
