Grilled Salmon with Yogurt Dill Sauce

Salmon:
Ingredients:
- 1 lb. salmon fillets
- 2 Tbsp. olive oil
- 2 Tbsp. fresh lime juice
- 1/4 tsp. kosher salt
Directions:
- Whisk together olive oil, fresh lime juice and kosher salt.
- Marinate salmon fillets in this mixture for 20 minutes.
- Grill salmon until cooked through (about 4 minutes per side).
Sauce:
Ingredients:
- 1 cup Brown Cow plain yogurt
- 2 cloves garlic, peeled
- 1 tsp. kosher salt
- 1/2 cup fresh chopped dill
- Dash of hot sauce
Directions:
- Strain yogurt in a strainer lined with a coffee filter to drain for 20 minutes.
- Mash garlic cloves into salt to form a paste.
- Mix strained yogurt (reduced to about 3/4 cup) with chopped dill and hot sauce.
- Serve grilled salmon with generous portion of the yogurt dill sauce and enjoy!
