Italian Chicken, Zucchini and Quinoa
Recipe submitted by Jessica O. of Fort Mill, SC, for the Mambolicious Recipe Contest 2009.
Ingredients:
- 1/2 cup sun dried tomatoes, chopped
- 1 cup chicken stock
- 2 Tbsp. San-J tamari
- 1/2 tsp. lemon-pepper
- 2 tsp. Italian seasoning
- 1 Bay leaf
- 2 Tbsp. olive oil
- 1 medium onion, diced
- 3-4 chicken breasts, legs, wings, etc. cut into bite-sized pieces
- 2 medium zucchini, diced
- 1 10-oz. bag frozen spinach
- 1 cup quinoa, cooked according to package directions
Directions:
- Combine first six ingredients, and set aside.
- Heat oil in skillet. Add onion and cook until translucent
- Add chicken and cook until no longer pink. Add zucchini, garlic, and first six ingredients.
- Cook until zucchini is almost done. Add spinach and heat through. Serve over quinoa.
