Macadamia Nut Panko Crusted Grouper

Ingredients:
- 3 Tbsp. cream of coconut
- 1 3/4 cup macadamia nuts, finely chopped
- 6 6-oz grouper fillets
- 3/4 cup Ian’s Panko Breadcrumbs
- 2 1/2 Tbsp. flour
- 3 Tbsp. butter
- Light olive oil for brushing
- Salt and pepper
Directions: Preheat oven to 425° F.
- In a bowl, combine Ian’s Panko Breadcrumbs, macadamia nuts, flour, and butter and set aside.
- Place a piece of aluminum foil on a baking sheet and brush it liberally with light olive oil.
- Salt and pepper the grouper on both sides and place on the foil.
- Bake for 5 minutes. Remove Grouper from the oven and brush each fillet with the coconut milk on both sides.
- Coat the Grouper with equal servings of the nut mixture and be sure to press the mixture over both sides.
- Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
- Remove from oven and serve.
