Mediterranean Lentils and Rice

Ingredients:
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 1 cup basmati rice
- 1/2 cup lentils
- 2-1/3 cups water
- 1 tsp. salt
- 1/2 tsp. cumin seeds
- Juice of 1/2 lemon
- 1 bunch coarsely chopped spinach
- 2 ripe tomatoes, cut in wedges
- 1 cup Brown Cow Cream Top Plain Yogurt
Directions:
- Saute onions in oil until soft.
- Stir rice in with onion until coated with oil and onions are transparent.
- Stir in lentils and add water, salt, cumin and lemon juice.
- Bring to boil and simmer, covered, for 45 minutes.
- Remove lid and place coarsely chopped spinach on top of rice/lentil mixture.
- Toss lightly and cover until it wilts.
- Plate it with plain yogurt and tomato wedges on the side.
