Olive, Orange & Caper Halibut

Ingredients:
1 Halibut Filet
1/4 cup Green Olives
1/4 cup Capers
1 Tbsp. Orange Juice
1 tsp. Fresh Ginger, minced
1/2 Tbsp. Olive Oil
Directions:
Combine olives, capers, ginger, and orange juice in a food processor and chop into a chunky paste.
Add some olive oil to an oven-safe pan or casserole dish. Place the halibut fillet in the pan, presentation side up. Pack the olive caper sauce on the top of the fillet evenly, about 1/4 inch thick.
Cook the fish in a 375° F oven 8-10 minutes, until cooked through. Serve with a drizzle of extra virgin olive oil.
