Pork Chops with Plum Sauce
Ingredients:
- 2 cups pitted (approx. 3/4 pound) plums (fresh or canned)
- 1/4 cup red wine or 1/4 cup red wine cider
- 1 pkg. Simply Organic Southwest Taco Seasoning Mix
- 2 lbs. pork chops (at least one-inch thick)
Directions:
- Preheat oven to 375º F.
- In a blender, combine washed plums, red wine or red wine cider and Simply Organic Southwest Taco Seasoning Mix.
- Purée until smooth, set aside.
- Preheat a large skillet on medium-high heat.
- Brown the pork chops on each side 2 to 3 minutes.
- Carefully place in a casserole dish large enough so chops are in single layer.
- Spread plum sauce on top of each chop.
- Place in oven and bake for 30 minutes or until pork is completely cooked.
Note: Top with brown sugar during the last 5 minutes of baking for extra sweet note.
