Turkey Meatballs
Submitted by Nicole M. of Stamford, CT, for the Mambolicious Recipe Contest 2009.
Ingredients:
- 1 lb. extra lean ground turkey or meat substitute
- 1/2 cup gluten-free oats
- 2 Tbsp. Jane’s Krazy Mixed Up Salt
- 1 pkg. frozen, chopped spinach (thawed, not drained)
- 2 egg whites
- 1/4 cup chopped parsley
Directions:
- Mix all ingredients together in a large bowl.
- Preheat oven to 350° F.
- Roll turkey or meat substitute mixture into golf-ball-sized meatballs.
- Place onto a non-stick cookie sheet in rows of three by four.
- Bake at 350° F for 30 minutes.
- Serve and enjoy!
