Meringue Pecans

Prep Time: 20 minutes
Cook Time: 1 hour
Ingredients:
- 2 egg whites
- 1 cup packed soft brown sugar
- 1 tspn. Vanilla
- 1 lb. pecan halves
Directions:
- Preheat oven to 250 degrees. Beat egg whites until almost stiff. With beater running, stir in brown sugar 1 Tblsp. at a time then add the vanilla. Dump nuts into mixture. Stir well.
- Line cookie sheet with aluminum foil. Place individual pecans in single layer on cookie sheet. Bake for 30 minutes. Turn over & bake another 30—35 minutes. Let sit in oven overnight.
- Store in refrigerator for up to one week.
