Caribbean Cobb Salad
Ingredients:
- 4 cups mixed greens
- 1/2 cup papaya
- 1/2 cup green pepper
- 1/2 cup red pepper
- 1/2 cup avocado
- 1/2 cup pineapple
- 1/2 cup jicama
- 1/2 lb. small shrimp
- 1 cup Monterey Jack cheese, diced or shredded
- 1/4 cup cashew pieces (garnish)
Directions:
- Roast cashew pieces for 8 minutes in 375 oven until golden.
- Arrange greens on a large platter.
- Form rows with the diced ingredients. Top with cashew pieces.
- Pour either Orange Wasabi or Lime-Cilantro Vinaigrette dressings over and serve.
