Creamy Tempeh Salad
Ingredients:
- 2 packages (8 oz.) Lightlife® Soy Three Grain Tempeh
- 1/2 cup green pepper, diced
- 1/2 cup red onion, diced
- 1 cup celery, diced
- 1/2 cup sweet relish
- 1 cup fat-free mayonnaise
- 1 tsp. prepared mustard
- 1 tsp. fresh dill
- 1/2 tsp. pepper
- 1 tsp. turmeric
- Salt to taste
- Lettuce leaves, tomatoes and black olives as garnish.
Directions:
- Dice Tempeh into half-inch cubes and steam for 15 minutes.
- Place in a mixing bowl.
- Dice vegetables. Add to Tempeh.
- Add all seasonings and soy mayonnaise. Mix well.
- Serve on a bed of lettuce garnished with tomato wedges and olives or as a sandwich filling or dip.
