Jack and the Beanstalk Salad
Ingredients:
- 1 can (15oz.) black bean
- 1 can (15oz.) kidney beans
- 1 can (15oz.) small white beans
- 1 can (15oz.) small red beans
- 6 scallions, sliced thinly
- 1 green bell pepper, seeded and slivered
- 6 oz. Horizon Organic Mozzarella shredded cheese
Vinaigrette:
- 1 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp. salt
- 1 Tbsp. fresh thyme leaves
- 1/4 tsp. dried mustard
- 1/4 tsp. freshly ground pepper
- 1/4 cup Horizon Organic Ruby Red Grapefruit Juice
Garnish:
- 1/2 cup Horizon Organic Parmesan Cheese
- 1/4 cup chopped parsley Drain and rinse beans.
Directions:
In large bowl, combine beans, scallion slices and green pepper slivers. Add shredded cheese and toss lightly. Mix dressing ingredients and pour over bean mixture. Sprinkle with parmesan and chopped parsley.
