Roasted Red Pepper Potato Salad
Ingredients:
- 1 bottle of Seeds Of Change® Roasted Red Pepper Salad Dressing
- 8 medium-sized new potatoes
- 3 medium-sized scallions
- 3 medium-sized celery stalks
- 3/4 cup feta cheese
- 1/3 cup black olives
Directions:
- Boil potatoes, then cool and cut into chunks.
- Thinly slice scallions and celery.
- Mix potatoes, scallions and celery together in bowl.
- Pour bottle of dressing over top and mix in gently.
- Dice feta cheese and slice olives, then sprinkle over top.
