Spinach and Chicken Salad with Hoisin Dressing
Ingredients:
- 1 cucumber
- 1 package (6 oz.) baby spinach leaves
- 1 large carrot, coarsely shredded
- 2 cups shredded, cooked chicken
- 1½ cups seedless red grapes, halved
- ½ cup chopped fresh cilantro leaves
- ¼ cup Kikkoman® Hoisin Sauce
- 2 Tbsp. distilled white vinegar
- 2 tsp. Kikkoman® Soy Sauce
- 2 Tbsp. vegetable oil
Directions:
- Peel cucumber lengthwise to form stripes; cut in half lengthwise.
- Remove seeds, then cut into thin slices.
- Mix cucumber with next 5 ingredients.
- Combine next 3 ingredients; gradually whisk in oil until well blended.
- Pour over salad; toss to coat all pieces.
- Serve immediately.
