Sweet Summer Fruit Salad
Ingredients:
- 6 small watermelon wedges, rind removed
- 2 cups cantaloupe, cubed
- 2 cups pineapple chunks
- 2 cups strawberries, sliced
- 2 cups red or green grapes
- 1/2 cup seeded watermelon, cubed
- 1/4 cup raspberries
- 1 Tbsp. honey
- 11/2 tsp. raspberry vinegar
- Blueberries & cherries to taste
Directions:
- Place watermelon wedges on 6 individual salad plates.
- Place cantaloupe, pineapple, strawberries and grapes on top of watermelon.
- In blender, process 1/2 cup watermelon and raspberries until smooth.
- Add honey and vinegar; pulse until blended. Drizzle vinaigrette over salad.
- Serve immediately.
