Tamari Peanut Chicken and Wild Rice Salad
Ingredients:
- 4 cups cooked brown basmati and wild rice mixture, cooled
- 2 cups cooked cubed chicken breasts, cooled
- 2 cups frozen peas, thawed
- 4 stalks celery, diced
- 3/4 cup roasted peanuts
- 1/4 cup chopped fresh parsley
- 3 scallions, sliced thinly (green and white parts)
- 1 bottle (8oz.) San-J Tamari Peanut Dressing
- 1/2 cup sun-dried tomatoes packed in olive oil, sliced, drained
Directions:
In a large bowl, combine the first 8 ingredients. Add bottle of San-J Tamari Peanut Dressing. Mix well and serve at room temperature.
