Balsamic Chicken Basil Sandwiches
Recipe submitted by Gabrielle H. of Irvine, CA, for the Mambolicious Recipe Contest 2009.
Ingredients:
- 1/4 cup balsamic vinegar
- 1 Tbsp. Jane’s Krazy Mixed Up Salt
- 2 Tbsp. honey
- 1 lb. chicken tenders or chicken breast, cut into strips
- 1 Tbsp. olive oil
- 1/2 cup fresh basil, chopped
- 1 1/2 cups Brown Cow Cream Top Plain Yogurt
- 1/8 tsp. sea salt
- 1/8 tsp. pepper
- 4 fresh sandwich rolls, sliced
- 1 fresh tomato, sliced (optional)
Directions:
- Combine balsamic vinegar, honey, and Jane’s Krazy salt in bowl, whisk to combine. Add chicken pieces, making sure to cover every piece in the marinade.
- Combine chopped basil with yogurt, salt and pepper. Cover and keep refrigerated until ready to serve.
- Heat olive oil in grill pan over moderate heat. Add chicken in a single layer and grill on both sides until done.
- To make sandwiches, spread basil yogurt sauce on each side of a sliced roll. Add chicken tenders or slices to fit and top with tomato slices.
