Tuna Melt Muffins
Ingredients:
- 1 can (6oz) tuna, drained and flaked
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced celery
- 1 medium-sized tomato, chopped
- 3 Tbsp. mayonnaise
- 8 green olives, sliced
- 2 Vermont Bread® Cheddar English Muffins, split
- Pinch of dried oregano
- Salt and pepper, to taste
Directions:
- In a large bowl, mix tuna with onion, celery, tomato, mayonnaise and oregano.
- Then add salt and pepper and leave aside. Toast muffins until golden color.
- Then put tuna mixture on to each muffin half, then top with cheese and olives.
- Grill until cheese melts. Serve hot.
