Black Beluga Lentil Pilaf

Ingredients:
- 2 Tbsp. HAIN® Extra Virgin Olive Oil
- 1/2 cup onion, chopped
- 1 garlic clove, finely chopped
- 1 tsp. cumin seeds
- 1 cup basmati rice, uncooked
- 1 Tbsp. currants, dried
- 1 3/4 cups Westbrae Natural® UnChicken Broth
- 1 can Westbrae Natural® Black Beluga Lentils, drained
- HAIN® Sea Salt to taste
Directions:
- Heat oil. Cook onion until tender, stirring continuously.
- Add garlic and cumin; cook 1 minute, stirring continuously. Stir in rice and currants.
- Add broth and heat to boiling. Stir, cover and cook over medium-low heat until liquid is absorbed.
- Add lentils 5 minutes before rice is finished.
- Uncover and cool for 5 minutes before serving. Salt to taste (not included in nutritional data).
