Tamari Greens & Potatoes
Recipe submitted by Pamela S. of Durham, NC, for the Mambolicious Recipe Contest of 2009.
Ingredients:
- 1 Onion, chopped (I prefer a Shallot, but I have found that yellow works great too)
- 1 Tbsp. Toasted Sesame oil
- 1 Clove Garlic, minced
- 4 Med. sized red potatoes, cut into 1/2″ pieces and steamed
- 1 Bunch of your favorite greens (Kale is excellent in this, but I often use Chard), Hard stems removed and leaves torn into smaller pieces
- 1/4 cup San-J Tamari Soy Sauce
Directions:
- Steam potatoes and set aside.
- Heat Sesame oil in skillet over med-hi heat, add onion and saute for 2 mins and add garlic, saute a few more mins. until onion is soft, but not brown.
- Add potatoes to skillet and lightly brown (approx 5 mins).
- Add greens to skillet, top with soy sauce. Cover and let stem about 5-7 mins, carefully turning the mixture ever few mins. (Add a little water if needed).
- Dish is done when greens are wilted to your liking and you’re ready to serve.
Chef’s Notes: You can use a variety of greens, onion or potatoes for this recipe….whatever is to your liking. I have used leftover potatoes instead of steamed and it still tasted great.
