Kagome Chunky Gazpacho

Ingredients:
- 1 hothouse cucumber, halved and seeded, but not peeled
- 2 red bell peppers, cored and seeded
- 4 plum tomatoes
- 1 red onion
- 3 garlic cloves
- 3 cups Kagome® Summer Tomato Juice
- 2 Tbsp. white wine vinegar
- 2 Tbsp. sherry vinegar
- ¼ cup olive oil
- ½ Tbsp. kosher salt
- 1 tsp. freshly ground pepper
Directions:
- Small dice the cucumbers, bell peppers, tomatoes and red onions and set aside.
- In a blender, combine the garlic, tomato juice, vinegar, olive oil, salt and pepper.
- Add ¼ of the chopped vegetables and blend.
- Chill the soup for 1 hour and pour into bowls.
- Top with the remaining vegetables.
