New England “Chick’n” Corn Chowder
Ingredients:
- 3 Tbsp. soy margarine
- 1/4 cup onion, chopped
- 1/4 cup celery, chopped
- 1 Jalapeno pepper, seeded and minced
- 2 Tbsp. flour
- 3 cups plain soymilk
- 1 package Lightlife Smart Menu Chick’n Strips
- 1 1/2 cups frozen corn kernels
- 1 tsp. fresh thyme, chopped (or 1/4 tsp. dried)
- 1/4 tsp. cayenne pepper
- 1 Package Lightlife Smart Bacon, baked or pan-fried until crisp, crumbled
Directions:
- Melt soy margarine in a large Dutch oven, over medium heat.
- Add onion, celery and jalapeno; cook for a few minutes, until tender, stirring frequently.
- Add flour, cook one minute, stirring constantly.
- Slowly stir in soymilk and remaining ingredients, except the Smart Bacon.
- Bring to a boil and cook until think, about five minutes.
- Serve hot with Smart Bacon crumbled on top.
