Vegan “Roadkill” Soup
Recipe submitted by Nicholas F. of Encinitas, CA, for the 2009 Mambolicious Recipe Contest.
Chef’s Note: This recipe was created by my son when he was about 7. It is totally his own creation.
Ingredients:
- Lightlife’s Gimme Lean “Beef” – 1 lb. (or meat)
- 1 carton tomato/roasted red pepper soup (“blood”)
- 1 carton sliced mushrooms and
- 1 chopped onion (skin and bones)
- 1 can drained black-eyed peas (eyeballs)
- A few sprigs of fresh thyme
- Salt and pepper to taste
Directions:
- Brown “beef” with onions and mushrooms – season to taste w/ salt and pepper.
- Mix together with thyme, soup and peas.
- Heat through.
