Speedy Shabu Shabu
Recipe submitted by Edwina G. of Great Falls, MT, for the 2009 Mambolicious Recipe Contest.
Chef’s Note: Shabu Shabu, traditionally a Japanese “fondue” made with meat and vegetables was the inspiration for my simplified version.
Ingredients:
- 2/3 cup the ginger people Ginger Sesame Sauce
- 6 cups organic vegetable or chicken broth
- 2 cups water
- 1 Tbsp. the ginger people Grated Ginger
- 1 Tbsp. minced garlic
- 1 bunch green onions, trimmed and cut into 1-inch lengths
- 1/2 small Napa cabbage, shredded
- 6 ounces shiitake mushrooms, stemmed and quartered
- 2 to 3 carrots, peeled and cut into matchstick-pieces
- 1 package LightLife Smart Strips – Steak
- 1 8-oz. package Lightlife Organic Soy Tempeh, cut into 1-inch cubes
- 6 oz. Udon noodles
Directions:
- Divide Ginger Sesame Sauce among individual small bowls; set aside. In large pot, combine broth, water, grated ginger, garlic, green onions, cabbage, mushrooms, and carrots; bring to a boil.
- Reduce heat and simmer 10 minutes or until vegetables are just tender. Add Smart Strips “Steak”, tempeh and noodles; cook until heated through and noodles are tender, about 5 more minutes.
- Divide among soup bowls. Serve with Ginger Sesame Sauce for dipping.
Chef’s Notes: This is my simplified version of traditional Shabu Shabu. While I’ve streamlined the preparation, I haven’t sacrified any of the flavor. Full of flavor, this is a real family favorite. Perfect for a weeknight meal when time is at a premium.
