Tomato Butternut Soup
Ingredients:
- 1 medium butternut squash, peeled and diced
- 2 cups EDEN Edensoy Original
- 2 cans (14.5 oz.) EDEN Organic Diced Tomatoes
- 1 tsp. EDEN Sea Salt, to taste
- 1 Tbsp. fresh ginger, optional
Directions:
- Place small pieces of squash in saucepan with Edensoy. Simmer until squash is soft.
- Add 1 can tomatoes, puree with squash. Add another can of tomatoes, leaving in chunks.
- Heat, add salt and ginger. Garnish with croutons and green onions and serve. Delicious and easy.
