Tofu Meatloaf

Ingredients:
- 1 ½ pkgs Nasoya® Firm Tofu
- 1/2 lb 85% lean ground beef
- 1/4 cup dry bread crumbs
- 1.5 oz packet meatloaf seasoning mix
- 1 egg white
- Topping:
- 1/3 cup ketchup
- 2 Tbsp brown sugar
- 1 Tbsp prepared mustard
Directions:
- To Press: Place the tofu between two paper towels and place on a plate. Press the tofu by using a couple heavy cans, book, or pan for about 20 minutes
- Preheat oven to 375ºF. Add the tofu to a food processor and blend until smooth.
- Transfer to a large bowl and add the beef, bread crumbs, seasoning mix, and egg white.
- Mix well and shape into a loaf. Place in a lightly oiled 9×5-inch loaf pan.
- Mix the topping ingredients together and spread on the loaf.
- Bake for 1 hour. Enjoy!
